Who says eating healthier is bland? I beg to differ! Tonight made a burger from the Laura's lean beef I got on sale for two bucks, oven fries,and oven fried wings

I took catfish and dipped it in an egg (of course beaten), then I mixed two tbsp of flour with cornmeal. I added onion powder, garlic powder, salt, and a tiny bit of lemon pepper seasoning. I dipped the fish in the egg then in the flour coating well. I placed in a pan that had been sprayed with no stick spray and two teaspoons of oil. Sprayed the fish and placed in a pan to let get slightly brown. Then placed on a baking sheet lined with parchment paper. Sprayed the fish one more time with cooking spray, and baked at 400.
I stuffed portabella mushroom caps,with part skim ricotta,no salt added tomato sauce, oregano, thyme, and italian seasoning, homemade turkey breast suasage, and topped with part skim mozarella and turkey pepperoni. Yummy!
The key to making them look nice is bake the caps first a little to soften at 350. Then stuff them.
